Every week I try to plan out the week’s dinners so I can do all my shopping at once and not have to worry what I will have to fix for dinner each night. I have found that sitting down on Sunday night or Monday morning for a half an hour and writing out the weeks meals and one big grocery list saves me hours over the course of the week. And every week I pull out a cookbook or magazine and try at least one new recipe, this week I’m trying 2, Tuesday and Wednesday will be brand new dinners. Here is what I have planned for this week, you can look forward to all of these recipes on this blog, I’ll post them as I go along.
Tonight: Grilled Pork Tenderloin Roulade with goat cheese and thyme served with spinach salad
Tuesday: Mediterranean Stuffed Chicken Breasts and fresh green beans
Wednesday: Grilled Steak with Baby Arugula and Parmesan Salad
Thursday: Grilled Chicken Salad with balsamic vinaigrette, strawberries, pistachios, and feta
Friday: Eggplant Risotto with pine nuts and goat cheese
